As summer rolls around, certain flavors instantly evoke memories: juicy watermelon, sizzling hot dogs, and creamy potato salad—all staples at outdoor gatherings. Yet, nothing captures the essence of summer quite like s’mores. Just hearing the word conjures up delightful images of sticky fingers, charred twigs, glowing embers, starry nights, fireflies, and satisfied bellies.

Throughout the years, I’ve encountered numerous recipes striving to recreate the classic s’more in bar or cookie form, but most have failed to live up to my expectations. I craved that deliciously gooey texture of a perfectly toasted marshmallow, the satisfying crunch of graham crackers, and the rich chunks of chocolate. So, I embarked on a quest to craft my own version.

When it comes to chocolate, Hershey’s has always been my go-to. While I appreciate gourmet options like salted caramel from time to time, nothing beats the nostalgia of a classic Hershey’s bar in a s’more. It just wouldn’t be the same without it.

In my S’more Bars recipe, I incorporate eight bars of chocolate along with a generous ten ounces of broken graham cracker pieces. I opted for larger chunks of graham crackers to achieve a pleasing layered texture, reminiscent of a true s’more. As for the marshmallows, while I dream of making them from scratch, the reality of being a busy mom of four means I often take shortcuts. That’s why this no-fuss s’more bar recipe is a favorite—it’s quick and easy!

Once the bars come out of the oven, the irresistible aroma of chocolate and sugar will fill your home, making it nearly impossible to resist cutting into them immediately. My kids can attest to the torture of waiting for them to cool. However, patience is key; let them set in the fridge for about two hours to achieve that perfect gooeyness. If you can’t wait, feel free to scoop out a serving into a bowl, and for an extra treat, top it with a scoop of ice cream—I won’t tell!

S’more Bars Ingredients:

  • 3 cups flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt
  • 2 sticks butter, softened
  • 2 cups brown sugar, packed
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 10 oz graham crackers, broken into large pieces
  • 1 10 oz bag of marshmallows
  • 8 Hershey bars, broken into small pieces

Instructions:

  1. Preheat your oven to 350ºF and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine flour, baking soda, and salt; set aside.
  3. Using a stand mixer or handheld mixer, cream together the softened butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing on low to medium speed until just combined. Then add the vanilla and mix for another minute.
  5. Gradually add the flour mixture, mixing just until incorporated.
  6. Gently fold in the graham crackers, marshmallows, and pieces of chocolate by hand.
  7. Press the mixture into the greased baking dish. Bake for 30 minutes, or until golden brown and a toothpick inserted into the batter comes out clean (avoid the chocolate and marshmallows for an accurate test).
  8. Allow the bars to cool in the fridge before serving, or store them in the refrigerator.

These S’more Bars encapsulate all the flavors of that beloved campfire treat without the need for a campfire. Somewhere, a tree is grateful for this innovation.
