If you’re planning a trip to Savannah, Georgia, make sure it’s on your must-visit list. I spent two unforgettable years there post-college and would return in a heartbeat. The cuisine, historical architecture, friendly locals, and, of course, the food are simply unmatched. One culinary gem I discovered during my time in Savannah is none other than banana pudding.
Oh, you’ve heard of it? I’m not surprised—once you experience it, it’s hard to forget. Who would have thought that a combination of pudding, bananas, vanilla wafers, and whipped cream could be so incredibly satisfying? Banana pudding is truly the quintessential comfort dessert.
While I’ve previously made banana pudding from scratch, including whipping the cream by hand, I opted for a more straightforward version a couple of years ago. To my surprise, people prefer this no-fuss recipe.
The Lazy Cook’s Simple Banana Pudding
Ingredients
- 2 packages (1 oz each) instant vanilla pudding
- 2 overripe bananas
- 1 container whipped topping, thawed
- 1 package vanilla wafers
Instructions:
- In a large bowl, prepare the instant pudding according to the package directions for pie filling. Once it has set, gently fold in the whipped topping and place the bowl in the refrigerator.
- Slice the bananas into ½-inch rounds.
- Layer the vanilla wafers at the bottom of a 2-quart casserole dish, followed by a layer of banana slices. Spread a ½-inch layer of the pudding mixture on top. Repeat these three layers until all ingredients are used or until you reach the top of the dish, ensuring the final layer is pudding.
Want to elevate the presentation? Consider making mini banana pudding cups in ramekins for individual servings.
Refrigerate for a minimum of 4 hours, but letting it sit overnight is ideal. The longer it rests, the more the flavors mingle, and the wafers soften into delightful vanilla cakes!
Note: This recipe can be easily adapted for those seeking diabetic-friendly options. Simply swap in sugar-free pudding, sugar-free whipped topping, and sugar-free vanilla wafers. If you struggle to find sugar-free vanilla wafers, consider using Murray sugar-free shortbread cookies as an excellent alternative.
