Have you ever bought an ice cream cake? They can be shockingly pricey. Recently, I spent $16 on a small cake that had a few Oreo cookies scattered on top. I expected it to be delicious given the cost, so I added it to my cart. What a mistake! It turned out to be a disappointment, lacking flavor and having a whipped cream topping that tasted like it had been on there for ages. So, I decided to try making my own ice cream cake. How difficult could it be? I figured I could create something far more appealing and tasty for about the same price or even less.

To start, I made an Oreo cookie crust. I recall when Oreo used to sell cookie crumbs, but I couldn’t find any, so I ended up scraping the filling off each cookie by hand. I wouldn’t recommend doing this on an empty stomach, as I ended up munching on more than a few!

After preparing the crust, I softened some vanilla and strawberry ice cream until it was easy to spread. I layered the ice cream into the crust, and everything was going smoothly. I added a layer of crushed Oreo crumbs between the vanilla and strawberry ice cream for added texture. I enjoy a nice crunch to complement the smoothness of the ice cream.

Rather than using whipped cream for a topping, I opted for crushed ice cream cones drizzled with chocolate ganache. And since I was already having fun with the cake, I thought it would be great to add real ice cream cones on top as well. That’s the beauty of making your own cake—you can customize it however you like.

To stabilize the ice cream cones, I broke off the bottoms so they would fit securely into the cake. I then added the chocolate-covered cone pieces around the cones I had placed in the cake. Once I was satisfied with the presentation, I put it in the freezer to firm up overnight. Just before serving, I scooped ice cream into the cones and topped them with whipped cream, sprinkles, and a cherry.

How much did I spend in total? Just over $14. Not only did I save money compared to the store-bought cake, but this creation looked and tasted far superior. The wow factor was through the roof! As long as you’re willing to invest a bit of time in the process, making your own ice cream cake is not only straightforward but also enjoyable.
