Celebrating birthdays is a big deal in our home! I love to surprise my kids each birthday morning by transforming the kitchen with colorful balloons and streamers and whipping up a delicious breakfast. And honestly, what could be more festive than birthday cake pancakes topped with sprinkles? Not much, in my opinion!
The kids absolutely adored these pancakes, and I found myself sneaking bites throughout the morning since the recipe yields a generous amount. I’m even contemplating freezing the leftovers (if they last that long!) for a delightful treat later.

- 1 box of yellow cake mix (plus the necessary ingredients: eggs, water, and vegetable oil)
- 1/2 cup colorful sprinkles
- 1 cup powdered sugar
- 1-2 tablespoons milk
Instructions:
- Gradually add milk to the powdered sugar until you achieve your desired consistency for the glaze.
- Prepare the yellow cake mix according to the package instructions.
- Gently fold in 1/4 cup of sprinkles into the batter.
- Pour 1/4 cup of batter onto a preheated skillet until bubbles form on the surface (just like making regular pancakes).
