Almond and Strawberry Salad

When it comes to big potlucks, I tend to stay away from most dishes. The thought of unknown cooks preparing food in unfamiliar kitchens gives me the creeps. If I do indulge, I usually opt for items that require minimal tasting or finger-dipping, such as salads or layered dips. Dishes like meatloaf or chili made by someone I don’t know? No way. I admit, I have my quirks.

However, at a bridal shower once, I encountered an almond and strawberry salad created by a stranger, and not only did I try it, but I also sought her out for the recipe. It’s incredibly simple to make and downright delicious. The combination of sweet strawberries, crunchy almonds, and the garlicky tang of the dressing is nothing short of magical. This salad is delightful on its own or can be topped with a fantastic chicken salad (which I whip up quite well!).

Ingredients for the Salad:

  • 5 oz container of mixed greens
  • 1 box strawberries, sliced
  • 1/2 cup sliced almonds, toasted

Dressing Ingredients:

  • 1/2 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 6 tablespoons sugar
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Instructions:

  1. Simply blend the dressing ingredients in a blender.
  2. Toss the mixed greens, strawberries, and toasted almonds with the dressing.
  3. That’s all there is to it! Yum!
