You can whip up a perfectly decent meal in just 90 seconds. Here are some of my favorite ideas. (Many of these involve pre-washed arugula from Trader Joe’s, which may not be the finest, but it’s definitely convenient.)
- Arugula Sandwich: Slather a slice of bread with enough mayonnaise so that the arugula sticks. Layer on some deli roast beef and a slice of pre-sliced cheese. Mustard is optional. Enjoy it as an open-faced sandwich or, if you’re feeling indulgent, add another slice of bread. And if anyone tells you that making homemade mayonnaise is easy, remind them that some things are better left to the professionals.
- Salmon over Rice: Swing by a Chinese restaurant for some rice on your way home, then open a can of salmon. Place the salmon on the rice, drizzle with olive oil and sprinkle with salt, finishing with a handful of arugula.
- Refried Beans Wrap: Microwave some refried beans mixed with cheese, then stir in salsa. Serve it in a warm tortilla heated over a burner.
- Cheesy Rice: Microwave rice with some grated cheese. It won’t rival risotto, but it’s a satisfying dish that you won’t mind eating.
- Avocado Toast: Toast a slice of bread, spread butter on it, then top with avocado slices and a dash of salt for a quick and tasty snack.
- Rotisserie Chicken: Stop by the store for a rotisserie chicken. Enjoy it with your hands, and pour your white wine into a mug to avoid spills.
- Simple Salad: Salads can elevate any meal and help ensure your kids get some greens. For a quick salad, toss arugula in a bowl with olive oil and vinegar. Forget salad tongs; a regular fork works just fine.
If anyone claims that cooking is a form of relaxation, ask them if they find it as soothing as enjoying a cold beer while binge-watching a show like Black Sails.
