The Simplest Banana Muffins Recipe

On most weekends, I love to involve my kids in baking sessions.   • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 4 large ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/3 cup melted butter
  • (Optional: nuts, chocolate chips, spices, etc.)

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Mix all of the ingredients together in a bowl.
  3. Scoop the batter into muffin liners or greased muffin tins.
  4. Bake for approximately 25 minutes.

These muffins are incredibly easy to prepare, making them an ideal solution for when your partner casually informs you at 8 PM that guests are coming for brunch the next day. (Trust me, it happened to me just yesterday!) Of course, this means you can enjoy more muffins for yourself.
